The crumbs aren't only on his shirt; they stick to the ends of his hair. Geralt ignores both bird and bits of food—at least until Sam arrives. Which answers Istredd's unasked question.

He plucks Jaskier off his shoulder and sets him down, croissant included. Sam's entry receives a nod. The gathering may have its roots in diplomacy, but Geralt is not a diplomat. He skips over any semblance of an introduction or greeting. Nor does he explain that Jaskier is a bird. He imagines the bard will un-feather himself soon enough.

As soon as Sam's settled, Geralt leans forward, palms planted on the table.

"I called you all here because I'm aware certain objectives have been in motion." His gaze slides briefly to Thancred. "Ones that I don't believe should be pursued in isolation of the Free Cities. But this isn't my area of expertise."

Hence, bringing in Sam and Jaskier. Even were he to give a shit about playing at politics, it isn't what he does. It isn't what he's good at—and yet, he's found himself being told people's plans and schemes, perhaps because of his connections to Yennefer and Sam and Jaskier. Or he's simply been in this world so damn long. The trust isn't unwelcome. He just isn't the person to run with these pursuits.
